What are good oil substitutions to use (fat substitutions)?

Most recipes within the Hestan Cue app make use of the following fats: canola oil, olive oil, or butter. These are fairly common fats which people already have in their kitchen or are otherwise readily available for purchase. However, there may be reasons why an individual would choose to substitute a fat: dietary restriction, health consideration, or even personal preference. Regardless of the reason, most recipes will cook up just fine on the Cue as long as the substituted fat has an adequate smoke point for the recipe it will be used in. Different fats may also introduce their own unique flavors to a dish which may influence your final decision.
